I remember the first time I went to Paris, I made it a mission to stop and pick up a crepe from one of the street vendors. I didn’t care if I looked like an obvious tourist. I have been eating crepes in America since I can remember, and the chance to eat a real, French one was one of my life ambitions (kind of joking, but not really). Rice pudding is not a new thing. The simple, but tasty dessert has been around for ages and adapted by various cultures. The rice pudding I’m going to share with you today is one adapted by the Greek, which was published by Bon Appétit magazine. If you’ve ever had those Kozy Shack rice pudding cups, then you’ll know exactly what this will taste like, a.k.a. divine. The difference is the cinnamon addition, but since I love the spice, I really enjoy the extra ingredient. Feel free to omit the ingredient if you’d rather have a more plain rice pudding.
When I first saw this recipe in Bon Appétit magazine, I was a little bit surprised. I don’t consider Fruity Pebbles to be in the gourmet, fancy food category that I normally see B.A. showcasing. But, as the saying so aptly goes, never judge a book by its cover (or in this case, a title!). As I continued reading the recipe, I realized that it actually really makes sense to use a sweet, crunchy cereal in a cookie, especially an oatmeal cookie. Traditional oatmeal cookies utilize rolled oats, and while rolled oats are not very crunchy, they do provide that textural addition that makes it different from, say, a sugar cookie or a chocolate chip cookie. The sweet cereal is also a nice contrast with the somewhat salty dough. It’s got that perfect balance of sweet and salty that so many of us enjoy.
